Homemade Chickpea Hummus (Vegan)

Serves 10 people

Best for: Brunch, Parties, Snacks

Recommended dishes to serve with: Shakshuka, as a dip for raw carrot & celery sticks


Cookware needed:

- Food processor


Ingredients:

- 1 can of chickpeas

- 8 tablespoons of tahini (or more if you prefer)

- 3 teaspoons of finely minced garlic (reduce if you prefer less garlicky taste)

- 1-2 juice of a lemon (to taste)

- 1/3 cup of extra virgin olive oil

- 1/4 cup of ice water (approximate measure, do not add all)

- 1 teaspoon of chopped parsley


Seasoning:

- 3 teaspoons of cumin (if you prefer less, you can reduce this)

- 4 teaspoons of sugar

- 3 teaspoons of paprika

- 1 teaspoon of salt



Garlic & Lemon peel oil:

- 10 cloves of garlic (sliced thinly)

- 8 lemon peels (skinned from the lemons you are using)

- 1/2 cup of extra virgin olive oil



Method:

  1. Boil canned chickpeas in a pot of water for around 10-15 minutes.

  2. While boiling the chickpeas, blend the tahini & minced garlic in a food processor and blend till smooth.

  3. Add the boiled chickpeas, lemon juice, salt, cumin, paprika, olive oil & sugar into the tahini mixture and blend. Add iced water slowly and bit by bit until the hummus reaches the consistency you prefer. [There's no need to add all the ice water in if the texture is smooth, the amount is there as an approximate measurement.]

  4. Add more lemon juice and seasonings to your liking.

  5. Put aside or in the fridge if you are making this in advance for a party. (If refrigerated, it is best to take the hummus out earlier for it to warm up to room temperature before you serve)


To Serve:

  1. Take the hummus out and let it warm up to room temperature if refrigerated.

  2. Create lemon peels with a peeler, you will want bigger chunks of lemon peel instead of zesting the lemon.

  3. Slice garlic cloves thinly, make sure they are in equal sizes so they will all cook evenly.

  4. Heat up 1/4 cup of olive oil in a pot, add garlic slices and lemon peels in, fry until the garlic slices are golden brown, and scoop out the garlic slices and lemon peel onto the hummus.

  5. Drizzle around 1 tablespoon of the oil from the pot on top of the hummus.

  6. Garnish with chopped parsley with a dash of paprika on top and serve. :)
