Cookware needed:
- Non-stick pan (preferred) / Cast iron pan
- Sifter
- Spatula
Ingredients:
- 2 cups all purpose flour (or cake flour)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs
- 2 cups greek yogurt (Plain, low fat)
- Toppings (amount & cut to your liking) : Bananas, strawberries, blue berries, any berries
- Maple syrup (amount to your liking)
- Butter: 1 knob (you can replace with another type of oil of your liking)
Method:
1. Sift 2 cups of flour into a large mixing bowl. Measure baking soda, baking powder, salt and mix them with the flour.
2. Whisk eggs in a bowl and add Greek yogurt into the bowl and whisk them together.
3. Pour the wet ingredients into the dry ingredients bowl and mix them well.
4. Add 1 teaspoon of oil or a knob of butter to a hot pan, then add the batter by ½ cup every time. Cook until bubbles begin to burst (about 2 minutes), flip and cook 1-2 mins more. Make sure you alternate the heat (medium to low) so the pancakes won’t burn.
5. Serve with toppings (cut to liking) and maple syrup.
Note:
This recipe is very flexible and can be adjusted based on your preferences / food allergies. This is also a fun recipe to do with children too! :)
