UCC Drip Coffee

Cookware needed:

Coffee Beans: UCC CM Bincho Charcoal Roasted Coffee

Grind: Fine grind (16 on the Encore grinder), can do a bit coarser for darker roast

Dripper: Hario V60 Dripper & Coffee filters



For 1-2 persons

Ingredients:

15g coffee beans (before grinding)

250g water (boiled to 100C)

Evaporated milk

Sugar


Method:

  1. Set up coffee filter in dripper, pour hot water over the coffee filter and pour away the excess water

  2. Grind 15g coffee beans with coffee grinder

  3. Place the coffee dripper on top of a scale

  4. Add grounded coffee beans into dripper, make sure the coffee grounds are in the middle, set scale to zero

  5. Pour 50g water gently over coffee beans, swirl gently and let bloom for 30 seconds

  6. Pour more water into the dripper until weight is up to 100g in total, do this within 10 seconds

  7. Pause for 10 seconds

  8. Pour more water into the dripper until weight is up to 150g in total, do this within 10 seconds

  9. Pause for 10 seconds

  10. Pour more water into the dripper until weight is up to 200g in total, do this within 10 seconds

  11. Pause for 10 seconds

  12. Pour more water into the dripper until weight is up to 250g in total, give it a gentle swirl and let the coffee slowly drip down to the pot

  13. Once all coffee is drained out, pour into cups and serve with evaporated milk and sugar (to taste)


For 4-5 persons

Ingredients:

30g coffee beans (before grinding)

500g water (boiled to 100C)

Evaporated milk

Sugar


Method:

  1. Set up coffee filter in dripper, pour hot water over the coffee filter and pour away the excess water

  2. Grind 30g coffee beans with coffee grinder

  3. Place the coffee dripper on top of a scale

  4. Add grounded coffee beans into dripper, make sure the coffee grounds are in the middle, set scale to zero

  5. Pour 60g water gently over coffee beans, swirl gently and let bloom for 30-45 seconds

  6. Pour more water into the dripper until weight is up to 240g in total, do this within 30 seconds

  7. Pour more water into the dripper until weight is up to 500g in total, do this within 30 seconds (pour slowly)

  8. Use a small teaspoion, stir the coffee & water in the dripper in one direction once, and then stir in another direction once

  9. Allow the coffee to drwin a bit, and then give the dripper a gentle swirl and let the coffee draw down into the pot

  10. Once all coffee is drained out, pour into cups and serve with evaporated milk and sugar (to taste)
